Ingredients
• 2 1/4 cups all-purpose flour
• 1 1/3 cups sugar, brown or white
• 3 teaspoons of your favorite baking powder
• 1/2 teaspoon of your favorite salt
• 1/2 cup shortening
• 1 cup of fresh milk
• 1 teaspoon vanilla
• 2 large eggs
Simple vanilla Giant Cupcake Directions
You will need to preheat your oven to 350 degrees. With your ingredients ready to go, line the giant cupcake tin with paper liner.. See, we are not making lots, only one giant one!
Mix together sugar, flour, salt, and baking powder in a large bowl. Now add your shortening, vanilla, and milk. Mix for 1 minute on medium-ish speed.
Then add the fresh eggs to your mixture. Beat for 1 minute on medium speed again. Beat on a higher speed for around 90 seconds until the mixture is well mixed
Fill the cupcake tins until 1/2 to 3/4 full.
Bake for about 20 or until an inserted toothpick in center comes out clean.
Leave to cool for 5-10 minutes, remove from tin and place on a wire rack to cool further.
Once completely cooled, you can then decorate as you desire.
